Peach Pie

My hubby will be the first to tell you that I may not be the best cook, but I can make a MEAN peach pie. No really. If we could only eat one thing for the rest of our lives, I am pretty sure this is what we would choose. I dont even like pie, but this… This is something else entirely. So today I am going to share with you my secret recipe along with some tricks to make it even better. I’ve included instructions in most of the images and the recipe in its entirety is found at the bottom of this post, but I’ll be sharing some tricks with each step as well. So get ready to make the most glorious treat known to mankind, get set… GO!

You Will Need 

Step 1: Pre-bake your pie shells.

I have never made pie crust from scratch, but if I did, I am sure it’d only make this decadent dessert a million times better. In the meantime, I’ll stick to Marie Calendars pie shells in the frozen section of the grocery store. Just follow the directions on the package and allow to cool.

Step 2: Peel those Peaches

I am about to blow your mind with this EASY way to peel peaches without losing ANY, and I mean ANY of your peach. It’s super simple too. Boil it.

Step 2: Cont.

Bring a pot of water to a boil and stick of few peaches inside. Let them sit in there for about 30 seconds to one minute. Not long at all. You dont want them to get too mushy!

After the skin starts to separate from the peach, I transfer them to a bowl of cold water. Mainly because I will hold it in my hand to get the peel completely off and it cools it down enough for me to hold it. I also run it under cool water and it seriously just slides right off.

Step 3: Slice ‘N Dice

After your peaches are all peeled, you’re ready to slice them up. I put them in a bowl, cover it with saran wrap and put it in the fridge while I make the glaze.

Step 4: Glaze of Glory

Next you will take the ingredients mentioned above; 2 1/2 C. Sugar, 3/4 C Corn Starch and 1/8 tsp Salt and mix well in a sauce pan.

Next add one cup COLD water. Bring to boil.

Once brought to a boil, add TWO more cups water and again bring to boil. Easy right?

Make sure to stir continuously because there’s nothing worse than burned glaze. After awhile, it will become a thick, gooey paste. Remove from heat.

Add 1/4 C lemon juice and Peach Jello packets and stir stir stir. I like TWO Peach Jello packets because I like a strong flavor. Do it. Just do it. I promise it’ll be good.

Step 5: Combine this Match Made in Heaven

Mix it all together and pile that pie high in the shells! Ok not too high because it makes a sticky mess. Pie shells usually come in two’s and this will definitely fill both easily. I even had enough left over to make another whole pie. But I think I’ll make fruit pizza with it tomorrow instead. 😆

Step 6: Chillax

Well done you little chef you! You deserve a break. So while your pie is chillin in the fridge, grab yourself a nice cold beverage and relax. The longer you can resist eating that magnificent morsel, the better it will be. It will set up and seriously taste divine.
